Sour Dough Pancakes with Blueberries
I am in the process of making a Sour Dough Starter so I can make some Sour Dough Bread. It is a process that can take up to 7 days but well worth the wait. Sour Dough Starter is made from flour and water and natural yeasts that for as it ferments. Each day it requires to be fed, taking out some of the original fermentation and adding in more flour and water. What to do with the left over Starter? Well I make
Blueberry Pancakes.
Ingredientss
1 egg
Half a cup of milk
1 tabsp yoghurt
Drop vanilla essence
125g Sour Dough Starter
90g plain flour
Half tsp. baking powder
Half tsp. bicarbonate of soda
1 tabsp sugar
Handful of blueberries
Method
Whisk the egg, milk, yoghurt, vanilla ess. in a large bowl
Add the Sour Dough Starter
Stir the remaining ingredients and leave covered for 30 minutes. The pancake batter will start to bubble
Heat your pan- I use a Breville Crepe Maker (sold on Amazon)
Drop spoonfuls of batter onto you pan and cook until bubbles start to form.
Flip over and cook the other side
Serve warm with a dollop of yoghurt and a few extra blueberries.
Once tasted you will never want to make pancakes any other way - yummy
